It is the first Friday of the Lenten Season and if you are like me, I am always excited (fresh outta the gate) to make all of our rotational Friday favorites that contain "no meat". Then, it quickly becomes a bit of a challenge. This is even more challenging considering the season of your life you are walking through. You may have a young family, busy scheudles, the rising cost of groceries and your budget...etc. You know what I'm saying.


This is a favorite of ours during this season (and really every season). Make a grilled cheese to serve along with it and you're set!
